I'm a big believer in "holidays" or just special days that break up the everyday ho-hum. Who doesn't love to get dressed up and celebrate? Just give me a reason. Take last month, for example. Sweet P had a special theme day every Wednesday at the Lodge (aka daycare). We went all out for PJ Day, Tropical Day and Sports Day.

Some holidays are more creative than other or just plain bizarre than others-  Save the Rhino Day? My personal favorites are Peanut Butter Day (January 24-- why only ONCE a year???) and No Housework Day (April 7). Love celebrating those days! 

And of course we do have a fiesta every year to celebrate Cinco de Mayo. More on our fiesta fun here:

While chicken fajitas are our "go to" Mexican meal, the Sailor and I have a couple of other winning recipes that pair well with margaritas if you're looking for a last minute dinner plan for tonight. 

It's been a dreary week here in the northeast. What happened to April showers bring May flowers? Consider beating the damp chilly weather with Healthy Chicken Tortilla Soup. Or make ahead Spinach and Black Bean Enchiladas. We throw in some chicken too because meatless meals are a no go in this house. The Sailor has to have a meat protein. Even getting fish on the meal plan can be a challenge some weeks!
